Parboiled Pork Soba with Plum and Wasabi Aroma

This cold soba is recommended for those dragging hot days when appetite is low.
Rich in vitamin B1, pork provides protein and helps prevent summer heat exhaustion.
Ingredients (1 serving)
- Tororo soba
- 1 bundle (90g)
- Pork (for shabu-shabu)
- 70g
- Umeboshi (pickled plum)
- 1/2 pc.
- Kneaded wasabi
- Appropriate amount
- Noodle sauce (straight type)
- 80ml
- Green shiso leaf
- 1 leaf
- Grilled nori
- Appropriate amount
How to prepare
- Add sake and dash of salt (not included in the recipe) to the hot water just before boiling. Add pork and boil (see "Point"). Drain and cool.
- Boil the soba noodles in a generous amount of boiling water for about 5 minutes. Rinse with cold water rubbing by hand, and drain thoroughly.
- Remove seeds from the umeboshi. Beat with a kitchen knife and mix gently with kneaded wasabi.
- Place ② on a dish, top with ①, green shiso leaf, ③, and shredded nori, and pour noodle sauce over this.

How to prepare
- Boil plenty of water to boil the soba noodles.
- Blanch the bean sprouts and drain.
- Cut the barbecued pork into thin slices, julienne the cucumber and carrots, and cut the cherry tomatoes in half.
- Combine Ⓐ to create the sauce.
- Boil the soba noodles in the boiling water ① for about 5 minutes, rinse and rub by hand in running water, and drain.
- Place soba on a dish, top with ②, ③, and Onsen egg (soft-boiled egg), pour sauce on top, and toss.

Tartar Chicken Tempura Hot Soba

How to prepare
- Cut the chicken into pieces of equal thickness. Slice vertically into 2–3 pieces.
- Place chicken and Ⓐ in a bowl or plastic bag, rub well, and leave for 10–15 minutes.
- Boil plenty of water to boil the soba noodles.
- Boil noodle sauce and water in a pot to create the pouring sauce.
- Cut the long green onions into thin slices and dip in water to crisp.
- Put Ⓑ in a bowl and mix lightly to create a batter. Thoroughly coat the chicken ②, and fry in frying oil at 170 to 180°C for 4–5 minutes (see "Point").
- Boil the soba noodles in the boiling water ③ for about 5 minutes and drain the hot water.
- Place soba noodles on a dish, pour sauce over it, top with chicken tempura and long green onions, top with tartar sauce, and sprinkle with cayenne pepper if you like.
Curry Nanban Soba

"Nanban" means "green onions." This dish's spicy scent and plentiful green onions spur the appetite.
The pork can be replaced with chicken or duck.

- Sliced pork back ribs
- 50g
- Abura-age tofu
- 1/2 pc.
- Long green onion

- Shiitake mushroom

- Soy sauce
- 1.5 tablespoons
- Mirin
- 1.5 tablespoons
- Curry powder

How to prepare
- Boil plenty of water to boil the soba noodles.
- Drain the oil from the abura-age tofu and cut into rectangular strips. Cut the long green onions diagonally. Cut the end of the stems off of the shiitake mushrooms and slice thinly.
- Boil Ⓐ in a pot, add pork and ②, and boil. When cooked, add curry powder (dissolve in 2 tablespoons of water) and mix. Add potato starch (dissolve in 2 tablespoons of water) to thicken.
- Boil the soba noodles in the boiling water ① for about 5 minutes and drain the hot water. Place on a dish, pour ③ over it, and sprinkle with tenkasu and shichimi pepper to taste.
